Ingredients

  • 2 oz Raspberry Brandy (St. George’s)
  • .75 oz Strawberry Shrub
  • .5 oz Lemon Juice
  • .25 oz Egg White

Time

3 Minutes. Shrub takes ~1 week to prepare.

Instructions

  1. Add brandy, shrub, lemon juice and egg white to cocktail shaker with no ice.
  2. Dry shake for 5-10 seconds
  3. Add ice
  4. Shake for ~60 seconds
  5. Strain and serve into cocktail glass

The Liquid Therapy is an American riff off the Pisco Sour, the velvety Peruvian cocktail, so if you’re American you can feel solidly patriotic drinking it. The Jewel features a trio of fruit flavors: raspberry, lemon, and strawberry. Like the Drunken Raspberry, the Liquid Therapy uses St. George’s Raspberry brandy is the base spirit – the brandy captures the flavor of the entire raspberry fruit from berry to stem. Freshly squeezed lemon juice rounds the drink out. Fresh strawberries were used to create strawberry shrub, an antique American drink ingredient originally made to preserve fresh fruit. The vinegar also lends the cocktail a little funk.

Like the Pisco sour, the Liquid Therapy uses egg white, so it requires some serious shaking to get proper texture.
