Despite its Pepto-Bismol appearance, it’s actually delicious.
A few weeks back we went to Hangar One Vodka (review coming soon). It got me thinking that I hadn’t made a cocktail with vodka in years – thanks in part to some horrific college memories. But I’ll be damned if the vodka tasting didn’t change my mind.
I found some St. Georges’ Green Chilli Vodka unopened in my “liquor storage unit” – aka the entire floor space behind my bar. I cracked it open and went to the interwebs to figure out something good to do with it. The lovely bunch of coconuts by Ashley Miller from The Front Porch on the St Georges’ site caught my eye.
The drink blends coconut milk, lime juice, and simple syrup with frozen pineapple and cucumber ice cubes. I was thirsty and didn’t have time to freeze ice cubes, so I made a few substitutions to create something new. I ditched the cucumber and pineapple, and subbed the Hangar One Mandarin Orange vodka for Cointreau. At first taste it was too sweet and unbalanced, so I added a half ounce of Campari for some bitterness. The resulting drink was pale pink, but tasted rich and well-balanced.
